Bread, I would never use to use a recipe that had yeast! Hated it, did not understand it...wasn't going there. But an incident happen with a pizza place, delivery driver, and a pizza. So I had to go there. There are a few tricks to it, but it's easy if you follow the yeast rules. 1. Do not use water over 120°f!!! I can not stress this enough. To hot of water will kill the yeast and your goodies will not rise. Should fell very warm, but not hot or burn.2. Pay attention to what kind of yeast packet or jar you get. Some aren't a quick rise and may take longer. 3. Make sure your yeast hasn't expired (and keep jar in refrigerator when not in use.) 4. Make sure you have given yourself enough time to make your recipe. 5. Make sure where you leave it to rise is warm, but not hotter then 150°f unless recipe specifies. Whole Wheat Biscuit
2c Wheat Flour
5tsp Baking Powder
1tb Sugar
3/4tsp Salt
1/4 c Butter Flavor Crisco
1c Milk
450°f bake 10-12min
Combine dry ingredients. Cut in Crisco until combined. Should be crumbly pea size mix. Add Milk, knead until mixed. Over handling will make dough tough. Roll out 1/4-1/2in thick and cut out. Place on lightly greased cooking sheet a few inches apart and bake. These are light and fluffy and so so so good :)

Mock KFC Biscuits

Sift the dry ingredients in a large bowl. Cut in the Shortening until a coarse texture.Add buttermilk and knead gently but thoroughly.The dough should be soft but not sticky: if it is, add a little more flour.
Knead for 1 minute, wrap in foil or wax paper and refrigerate for at least 20 minutes. Roll out dough 1/2 inch thick on a lightly floured surface and cut with a biscuit cutter. (If you don’t have one, use a cup)
Place biscuits onto a dark baking sheet and bake 450°for until golden brown, 10-12 minutes.

Baking TIP!!!! Put water in microwave for 30-60secs. It should be very warm to touch but not hot. If recipe calls for milk and it is cold will take a bit longer to make warm. If you do not have a warm place for your bowl to set, heat oven until it reaches 115°f -130°f for best results. Or follow your bread maker instructions. I use to avoid recipes that called for yeast, and now I have no idea why I was scared.
Hamburger Buns(8)
1c Warm Water (120°f )
2tb Room temp- Butter
1 Egg
3-1/4c Flour
1/4c Sugar
1tb Yeast
{1 egg yolk+1tb Water} Egg Wash
Place Water, sugar and Yeast in Large mixing bowl, wait 5min. When foamy add remaining ingredients mix until smooth and elastic. Knead 7min. Cover place in dry warm area let rise 1-1/2hrs. Now divide into 8 round bun shaped then place on Greased cookie sheet. Cover place in dry warm area again 30min. Brush tops with Egg Wash, Bake 375°f 12-15min. These are incredible!! I haven't bought Buns in a long time now because of this yummy yummy recipe!!

2 pkgs regular or active dry yeast (4 1/2 tsp.)
2 tb Honey
2tb Sugar
1/4c Water
1/2c Milk
2tb Butter
2tsp Salt
In a large mixing bowl, stir together 3 cups of whole wheat flour and 1-1/2 cups warm water. Set aside to let rest for 30 minutes. When last 10min Remain, mix together 1/4 cup water, yeast,sugar and honey. Let sit for at 10 min. Melt butter, milk and salt in a small saucepan on the stove. Do not allow the mixture to get above 115°f . Pour yeast mixture and milk mixture into flour mixture. Add remaining two cups of flour (more if needed). Knead for about 10 minutes until dough is smooth and elastic. cover Place in Dry warm area and let rise for at least an hour…or until it has doubled. Roll dough onto a clean counter top and knead for a couple of minutes to get any air bubbles out. Roll dough on a lightly floured surface until about 1/2 inch thick. Cut circles from the dough with a large drinking glass or wide mouth jar. Place circles on in a well buttered baking dish about an inch apart. Cover place in Dry warm area let rise for about 30 minutes. Bake 350°f 20-25min. These are very light and fluffy for Wheat buns. If you want them a little browner you can brush with egg wash. Or melted butter

Fav. Bread Sticks
1-1/2 C Warm Water(120°f )
2tb sugar
1tb yeast
1/2 tsp salt
3-1/2- 4 C flour
1/4 C butter
Topping
3/4 C grated Parmesan or mozzarella cheese
1tsp Garlic Powder
1tsp Onion Powder
1tsp Oregano
Mix the water, sugar and yeast in large mixing bowl. Let it sit for 5 minutes. Add the salt and the flour, one cup at a time, until it is well incorporated. Mix on high for 5 minutes. Let the dough rest for 5 minutes. Melt the butter and pour half of it into a jelly roll pan (large cookie sheet). Place the dough in the center of the pan. Let it sit for 2 or 3 minutes. Letting the dough rest. Spread the dough out flat onto the pan until it reaches all of the edges. If dough starts to form back let it rest a few more min then try again. Cut Dough down the middle then 2in strips with pizza cutter. Pour the other half of the butter onto the dough. Spread evenly. Now Sprinkle topping on top. Cover place in 170°f turned off oven let rise 7-10min. Turn you oven up to 350°f and bake for about 12 minutes, or until golden brown. These I have eaten as the meal because I couldn't keep my hands off of them.
1-1/2 C Warm Water(120°f )

Mock Olive Garden Bread Sticks
1-1/2c Warm Water(120°f )

4c Flour

Pour liquid into dry ingredients and mix until a soft sticky dough forms. remove dough to a lightly floured surface and knead 5 minutes, until dough is no longer sticky. Place in a well oiled bowl, cover and allow to rise until doubled in size 1 hour. Punch dough down and place into a well oiled 12″ pizza pan. You can also use a square dish(10″x10″ is common) Using your hands, move dough around the bottom of the pan and 2/3 the way up the sides. Set aside and let it rise 10 minutes. Brush crust lightly with olive oil and prepare pizza add sauce and toppings, and cheese. (To Cheap of ingredients will result in taste!) Bake 450°f 15-20 min.

Alfredo Pizza
Thin Crust Pizza
1/2C Warm Water
3tsp Yeast
1-1/4C Water room temp
2Tbsp Olive Oil
4C+ Bread Flour
Corn meal
Olive Oil for greasing
In Mixing Bowl combine 1/2water and Yeast let sit 5min. Add room temp water, and oil and stir to combine. Place the flour and salt in the bowl of a stand mixer fitted with the paddle attachment. Briefly combine the dry ingredients at low speed. Slowly add the liquid ingredients and continue to mix at low speed until a cohesive mass forms. Stop the mixer and replace the paddle with the dough hook. Knead until the dough is smooth and elastic, about 5 minutes. Form the dough into a ball, put it in a deep oiled bowl, and cover with plastic wrap. Let rise until doubled in size, about 1 ½ to 2 hours. Press the dough to deflate it. To bake, place a pizza stone in the lower third of the oven. Heat the oven to 500° for at least 30 minutes. Turn the dough out onto a lightly floured work surface. Divide the dough into two equal pieces. Form both pieces of dough into smooth, round balls and cover with a damp cloth. Let the dough relax for at least 10 minutes but no more than 30 minutes. Working with one piece of dough and keeping the other covered, shape the dough and transfer to a pizza peel or round of parchment dusted with semolina or cornmeal. Top as desired. Slide the dough onto the pizza stone. Bake until the crust edges brown and cheese is golden brown in spots, about 8 to 12 minutes. Repeat with remaining ball of dough or freeze for later use.

2c Self Raising Flour
1/2tsp Salt
1c Dry Powered Milk
3/4/-1c Warm Water
Oil for frying
Sift dry ingredients. Slowly add water mix well with hands. Let rest 10-15min. On lightly floured surface Cut dough into 4 equal parts. Gently form dough into balls, lightly knead for about 1min. Then roll out into circles. Place Oil on med heated griddle. Gently place dough on Oil griddle a fry 2min on each side or until golden. I have done many things with this bread recipe. I have brushed it with oil,and garlic then fried and it made a nice quick bread stick. Also when finished fring brush with oil and then top with cinnamon, sugar mixture for a dessert. I have deep fried this bread and made Indian taco's. I have also placed a tb of yeast into bread mix, cover, rise in dry warm area 1-1/2hrs then baked in oven 350°f 15min.

1 Loaf Bread
2tb Olive Oil
1tsp Oregano (optional)
1/4tsp Paprika
1/4tsp Pepper
Cut the bread into ½-inch cubes and put into a large bowl. Drizzle the olive oil over the bread. Sprinkle the bread with the oregano, paprika, and pepper. Toss the bread lightly in the oil and spices. Spread the bread out on a sheet tray and put the tray into the oven. Bake 350°f 10- 15 minutes, or until crispy and browned. Store in an airtight container until use.

In large mixing bowl combine together warm water, yeast, and sugar, Let set 5min until foamy. Add the oil, salt, and 2 cups of the flour mix on low speed. add 1 cup of the remaining flour at a time Combine well. knead until smooth and elastic, about 5 minutes. Lightly oil a large bowl and place the dough in the bowl - turn to coat. Cover the bowl with plastic wrap or towel and let rise- warm dry place until doubled, about 30 minutes. Turn the dough out onto a lightly floured surface and gently deflate into a rectangle. Cut it in half vertically, then each half vertically again into thirds so you have 6 equal strips of dough. Cut each strip of dough into fourths by cutting horizontally to make 24 little squares of dough. ( I made 16 larger rolls) Place each rolled piece of dough into a lightly greased 9x13 baking pan in rows of 4 about 1/2-inch apart. Cover in Warm dry place let rise again 30-60min. Bake 400°f15-20min. I have made roll after roll after roll trying to find that light and fluffy roll! Has been a nightmare and a lesson!!!! These are perfect and will now be the only recipe I will use for dinner rolls hope you enjoy!!

Mock Texas Roadhouse roll(3hrs makes 2-3doz)
4tsp Yeast
1/2 c. Warm Water
2c Milk, scalded and cooled to lukewarm
3tb Melted Butter
1/2c Sugar
7-8c Flour
2 Eggs
2tsp Salt
Dissolve yeast in warm water with a teaspoon of sugar, let set 5min. Combine yeast mixture, milk, 1/2 cup sugar and enough flour to make a medium batter (about the consistency of pancake batter). Add melted butter, eggs and salt. Beat well. Add enough flour to form a soft dough. Sprinkle a small amount of flour onto counter and let dough rest 10min. Knead dough 5min until smooth and satiny and put in oiled bowl. Cover and let rise in a warm place until double 1-1/2hrs. Punch down. Turn out onto a floured board, roll out into a rectangle 1/2in thick, Fold in half, let rest 10min. Cut, place on greased baking sheets, cover let rise again 1hr. Bake at 350°f 15-20mins. Brush immediately with butter. These were really really good and I would say almost exact! Next time I will make them bigger
Cinnamon Honey Butter
1/2c Butter room temp
1/4c Powdered Sugar
1/4c Honey
1tsp Cinnamon
Beat butter for 30secs. Add ingredients beat for 2-3min. until really light and fluffy. Yield: about 3/4 cup.
4tsp Yeast
1/2 c. Warm Water
2c Milk, scalded and cooled to lukewarm
3tb Melted Butter
1/2c Sugar
7-8c Flour
2 Eggs
2tsp Salt
Dissolve yeast in warm water with a teaspoon of sugar, let set 5min. Combine yeast mixture, milk, 1/2 cup sugar and enough flour to make a medium batter (about the consistency of pancake batter). Add melted butter, eggs and salt. Beat well. Add enough flour to form a soft dough. Sprinkle a small amount of flour onto counter and let dough rest 10min. Knead dough 5min until smooth and satiny and put in oiled bowl. Cover and let rise in a warm place until double 1-1/2hrs. Punch down. Turn out onto a floured board, roll out into a rectangle 1/2in thick, Fold in half, let rest 10min. Cut, place on greased baking sheets, cover let rise again 1hr. Bake at 350°f 15-20mins. Brush immediately with butter. These were really really good and I would say almost exact! Next time I will make them bigger
