Best French Fries!!
2-1/2lb Sliced Potato
1c Flour
1tsp Garlic Powder
1tsp Onion Powder
1tsp Salt
1tsp Paprika
3/4c Water (or more)
Oil for Frying 350°f
Place your Potato slices in a bowl of cold water until you are ready, this will help keep your potato from turning brown. Sift dry ingredients in a large bowl. Slowly add water, whisk mix well. Your mix should be consistency to a drizzle. Place Potatoes in batter, mix to coat. Then drop in hot oil 1 at a time. Try not to overlap they tend to stick together. My hubby has also used this batter with sliced onions..and they were great to!

1tsp Salt

Oven Rack should be placed to the lowest rack. 450°f
Place potatoes in microwave safe bowl, Wrap top. Microwave 3-5min until edges start to get translucent , half way through shake potatoes. Place potatoes on towel and blot dry. Place 5tb of oil in baking sheet. Place potatoes single layer bake 5-7min. Mix the cornstarch,spices, salt and 1tb oil. Toss to coat potatoes with cornstarch mix. Place in single layer on hot baking sheet. Bake another 25-30min flip over half way through. These were crisp baked fries, a bit of a process but well worth it! These are excellent!! I do not think they are any better for you then the fried version because of the oil, unless you use a Healthier oil...

Keep 1 half potato in water and boil another 10-15min or until is fully cooked. Take the 3halfs you removed set aside and let cool to touch. Then shred and grate. Drain your cooked potato and add the butter,cream and salt now mash until creamed. Add the shredded potatoes combine mix well.In another dish combine Crumbs,four and seasoning. Take potato mixture and shape. Then dredge,or pat into flour mix then place on on a sheet and freeze 20min. Now fry about 5min. Homemade tots are awesome and tastes a lot better then any frozen bag!

Hassle-back Potatoes
8-Potatoes, Washed
2tb Oil
Sea Salt, or Coarse Salt
Oil a large shallow glass baking dish. Place potatoes on a cutting board and cut a narrow 1/4-inch slice from the bottom of each potato, discard the slice (this helps the potato lie flat and not roll). Use a sharp knife and slice each potato crosswise, making 1/4-inch apart slices, cutting down vertically. Leave 1/4-inch of the bottom of the potato intact.Carefully drop them into cold water to prevent potato from browning. Gently flex the potato fans open while rinsing under cold running water. This rids the potatoes of excess starch that can impede fanning. Dry potatoes well before baking. Place potatoes in the oiled baking dish. Brush potatoes with the 2 tablespoons olive oil. Sprinkle tops with salt. Cover with aluminum foil and bake 450°f 30 minutes. Remove the aluminum foil and bake an additional 15 minutes. Remove from the oven. This is Great for a Quick cooking potato and tastes yum. Another way to make this potato is to Peel, mix 1/4c Parmesan Cheese + 1/2c Bread Crumbs +1tb Oil then pat the bread crumb mixture on top of each potato.

Slice potatoes extremely thin 1/16in. The thinner the crispier! Rinse slices and pat dry. Place in hot oil 365°f. fry about 2min on each side or until light brown. Place on paper towel and let excess oil drain off salt to taste. When my brat tried this she says"taste like the real thing"!! Well I should hope so. Not sure how well these keep, every time I make them there are not any left overs :) But I would think and air tight container would be best.

Mix flour and seasonings on shallow plate. Take a handful of mashed potato and make into disc shape. Place oil on med-high griddle. Dredge your disc potato into flour on both sides, place on hot oil and cook about 2-3min on each side.

Place potatoes in dish, season. Pour cream on top of potatoes, then sprinkle cheese evenly over potatoes. Cover with foil, poke steam holes into foil. Bake 400 F 1hr and 15min on middle shelf rack . Lower oven rack to bottom and bake another 15-20min. enjoy

1tsp Salt

2 Egg Whites beaten
475°f Sprayed Cookie Sheet
In bowl place egg whites set aside.On plate combine flours,cornmeal,seasonings mix well. Dip zucchini in egg whites then coat in flour mix. Place on prepared cookie sheet. Spray top side with spray oil. Bake 7min then flip the zucchini. If you see any white flour mix respray, bake another 5min. These are light and crispy and very very good :)

I did find a sauce that went real well with the fries.....
Yam Sauce
1/2c Sour Cream
1/2c Mayo
1tb Horseradish
1tb Honey
1tsp Paprika
-------combine all ingredients then chill.--------(is drizzled in pic above)

1c Sugar
1tsp Vanilla
1/2c Butter
1/2c Milk
Mix all ingredients Pour into 9x13 Greased baking dish.

Mix well until crumbly. If still to soft add more Flour. Sprinkle on top of Yams. Bake 350°f 25min. Might want to reduce the amount of white sugar...this dish was really good but a little on the sweet side. almost a dessert style.

Dredge squash into flour,then milk, and finally in crumbs. Place in heated oil 350°f about 2-3min. These went well with ranch, and the yam sauce. Next time I will try them baked

In heavy large skillet heat oil over med-high heat. Add rice stirring often when rice turns light brown stir in broth and salsa, reduce heat, Cover and Simmer 25min.brown rice 50min) Cook until tender, if all water is absorbed before rice is cooked add another 1/2c water until finished. My daughter does not like salsa because of it's chunky state...so I placed in Magic Bullet pureed it then added it to rice She ate it up I really enjoyed this rice.
